My husband and I love making homemade tamales and we hardly ever have left overs but, when we do, I turn them into a healthy lunch for my stay-at-home-mom self! :) I've got to spoil myself in little ways. (My husband spoils me in big ways! LOL)
Tamale Skillet Lunch
Before cooking, always prepare your mise en place!
(This is the french cooking term for "everything in it's place.")
In other words, do your prep work!
Cut up all of your ingredients, (garlic, cauliflower, mushrooms, kielbasa, left over tamales, and cilantro) and have them ready to add to the skillet.
Put your skillet ( I prefer cast iron for all my cooking but,
any skillet would work,) over a medium heat and add butter.
When the butter is a nice bubbly brown, add the chopped garlic and stir.
Let the garlic simmer until the smell is so yummy your mouth waters,
then add the cauliflower and saute until browned.
Toss in your mushrooms.
Sprinkle with salt and pepper.
Next, put the kielbasa in and give it a good stir.
Let it saute for a few minutes while the mushrooms
soak up the goodness from the sausage.
Now for the star of the dish, the left over, cut up tamales!
Once everything is cooked down and heated through,
mix in half of the cilantro and a squeeze of lemon juice.
Garnish with shredded cheese, sour cream, the remaining cilantro,
and a few more squeezes of fresh lemon juice.
Voila! You have made a delicious, and deceptively healthy lunch! Now, eat it quick, while you still have nano seconds of free time!
